Nine speakers, experts in their fields, will be addressing the delegates at Gallagher Estate
on the 20th of July 2009 with a carefully selected range of topics that will give you valuable
insight into Halaal, its impact in the market place and opportunities for the entrepreneur.

Two of the stellar speakers are:-
Dr Mohammad Mazhar Hussaini, MS, LD
President of the American Halaal Foundation and the Association of American Halaal
Certifiers, a founding member and ex-Director of Islamic Food and Nutritional Council of America
(IFANCA) and is currently the CEO of the North American Halaal Foundation.
He holds a Masters degree in Food and Nutrition sciences, is a licenced dietician and
nutritionist, as well as a prolific author.
His talk is designed to give an understanding of Halaal as a cornerstone of the faith of over
a billion customers.
Dr Hani Mansour Al-Mazeedi of Kuwait.
Son of the founder of the Kuwaiti parliament, Mansour Al-Mazeedi, Dr Hani is a Kuwaiti
scientist. He is known to have more than 29 years of continuous works in Food Safety and Food
Quality Systems, in addition to Halaal Food Service requirements. However, the system that has
taken most of his interests in the field of food safety is Hazard Analysis and Critical Control
Points (HACCP) in addition to related systems such as Good Health Practices (GHP), Good
Manufacturing Practices (GMP) and prerequisite programs which formulate the basis of food
inspection.
Dr. Hani has presented intensive training courses for a number of food establishments in
Kuwait and abroad, in addition to academic universities. Additionally, Dr. Hani traveled to
famous food industries and slaughterhouses in the world and watched closely the latest
techniques in food processing. These countries include Australia, New Zealand, USA, France,
Brazil, Italy, Saudi Arabia and Syria.
A published author with four major publications to his name, he currently works as an
associate scientist at the Kuwait Institute for Scientific Research.

The Story of our Beginning, the Present and the Future THE RAIN AND FACT ORGANISATIONS
Mr Abie Dawjee is the director of the Research and Information Network (RAIN) and Fact
International South Africa (headquarters in Jordan). RAIN sends out a daily newsletter on the
internet which is a compilation of articles relating to current issues around the world. These
are mostly of an analytical nature, written by leading commentators and provide an alternative
perspective to what is generally reported in the mainstream media.
As a veteran journalist and political analyst Mr Dawjee has a weekly radio program in which
world issues, especially the Middle East, are analyzed. He is regularly called upon by the media
here and in the neighbouring countries to comment on matters in the news. As an activist, Mr
Dawjee has vigorously campaigned in support of the struggles in Palestine, Kashmir, Iraq etc. He
led a delegation of 'Human Shields' to Iraq at the outbreak of the war.
In keeping with his mission to educate people about what is really happening in the world, Mr
Dawjee initiated the Middle East Educational Tours. In the 10 years that these tours have been
conducted (4 times a year) thousands of South Africans have benefitted from learning about the
issues in the region and have also gained immense spiritual upliftment.
Eight years ago, together with Dr Zakaria al-Sheikh of Jordan, the Fact International company
was launched as a service provider of news via a newspaper, a radio station and a multimedia
website with both Arabic and English content (www.factjo.com). A satellite TV station is on the
cards.
At the same time, Fact International began facilitating a study programme where South
Africans were given the opportunity to learn Arabic at Zarqa Private University in Jordan. The
results of this have been well beyond expectations with students from as far a field as the
United Kingdom and Australia enrolling.

I entered upon Aisha (mother of the faithful), (may
Allah be pleased with her), with some women of the tribe of AbdulQays, and asked her about
mixing dried dates and raisins (for drink). She replied: I used to take a handful of dried dates
and a handful of raisins and put them in a vessel, and then crush them (and soak in water). Then
I would give it to the Prophet (peace be upon him) to drink.

Mushroom soup for a dozen hungry people. Adjust quantity to suit your family.
Chicken and Mushroom Soup
Ingredients
- 16 wings or 1 kilo chicken fillets
- 2 Onions
- 4 Turnips
- 2 Potatoes
- 2 Spring Onion Stalks
- 1 punnet of Mushrooms
- 1 pkt Black Pepper Sauce
- 1 pkt Mushroom Soup
- 1 tin Creamstyle Corn
- 1 tin Whole Kernel Corn
- Salt
- Pepper
- 1 Bunch of Dhania
- 500ml Cream
Method
1. Cut chicken fillets into pieces. Rub with garlic, black pepper, salt. Allow to stand
overnight or at least an hour.
2. Boil all vegetables except Spring Onions & Mushrooms. Liquidise once done. Cut spring onions
& mushrooms into thin slices.
3. Brown chicken in a little olive oil.
4. Add liquidised veggies & sliced veggies to chicken. Add some water and allow to boil.
5. Make black pepper sauce & mushroom soup as per instructions on pkts. Add to pot and allow to
cook on medium heat, stirring continuously.
6. Add both corns and allow to simmer.
7. Now add salt & pepper & finally the chopped dhania.
8. Allow to simmer.
9. Take off from heat once cooked & allow to stand for 5 mins.
Now stir in the Stork Cremedous.
Chef's tip: Serve with warm French sticks or garlic bread.

Your discovery column of spectacular spice, fabulous fruit, incredible
ingredient, vital vegetable, marvellous mineral and vibrant vitamin.
5000 years ago, Middle Eastern people discovered that ripe fruit when dried accumulated
natural sugars and kept almost indefinitely. They preserved dates, figs and apricots by sun
drying which is still the most favoured technique today with artificial drying making
inroads.
Approximately 2.5 kg of fresh fruit is required to produce 500 grams of dried fruit and has a
stronger flavour due to the removal of the moisture.
Commercially produced dried fruit may contain sulphur dioxide (E220) and some switch to
organically-grown product.
Here are two examples:
RAISINS
A dried grape and one of the most popular of all dried fruit. Produced mainly in California and
the Middle East. An excellent snack especially mixed with nuts and used for baking.

Morning Buzz Body Scrub
- Makes 1-2 treatments -
Ingredients
- 1/4 cup freshly ground coffee
- 1/4 cup buttermilk
- 2 Tbsp. wheat germ
- 2 Tbsp. honey
- 1 Tbsp. grapeseed oil
- 1 egg white
Directions:
In mixing bowl, combine buttermilk, honey, grapeseed oil and egg white, mix thoroughly. Slowly
add coffee and wheat germ being careful not to clot or clump. Scrub should be smooth and creamy
but with a slight grit. Allow to stand. Apply all over in shower or bath using a washcloth or
body sponge to aid in exfoliation. Rinse completely. Towel dry and apply moisturizer. Chill
remaining scrub if necessary.
Tips
Benefits: Rids the skin of dry patches and aids in circulation. Helps to reduce cellulite
while it firms and tones. Leaves skin smooth and supple.

Q: I would like to find out if bokomos strawberry cereal pops are Halaal suitable.
A: Kindly note that all Bokomo cereals are certified Halaal by SANHA.
Q: Please advise about the Wimpy Tomato Sauce and salad dressing which contains E211, an
alleged Pork Derivative also used in Fanta Apple. Both these products carry the SANHA approval.
A: Wimpy Tomato Sauce and salad dressing manufactured by Famous Brands is certified Halaal by
SANHA.
E-211 (Sodium Benzoate) contained in the Wimpy products and many other products as well as Fanta
Apple is a Halaal preservative and most definitely NOT sourced from porcine origin.

World Halaal Food Industry Estimated To Rise To US$655 Billion
KUALA LUMPUR: At a meeting of the World Halaal Forum attended by amongst others, The
South African National Halaal Authority (SANHA), the world Halaal food industry is estimated to
rise to US$655 billion next year from US$635 billion this year, the latest research by the World
Halaal Forum has showed, former prime minister Tun Abdullah Ahmad Badawi disclosed.
He said the industry was rapidly becoming more and more of a focal point of interest in the
current global economic malaise, proven by increasing international representatives within the
Halaal supply chain at the 4th World Halaal Forum Dinner.
"Representatives have joined us from international animal welfare organisations, the World
Bank, and also foreign analysts," he said.
The international trade of Halaal food products had less than 10 percent share in the global
market.
Thus with concerted industry efforts, the Halaal industry will become the mainstream choice
for not only Muslim customers but also for non-Muslims, he said.
