Editorial

“O Mankind listen to me”

One thousand four hundred and twenty one years ago, a man sitting atop a camel in the burning heat the Arabian desert delivered a sermon to the multitude gathered there. It was no ordinary sermon by no ordinary man for its effect was to reverberate to the far flung corners of the of the world with the adherents of that religion numbering more than 1,5 billion of every hue, colour, creed, kind, nationality, living in almost every country of the planet today.

It was a momentous farewell address by the Final Messenger to Mankind, the Prophet Muhammad (peace be upon him). It was a miracle of elocution and compelling power delivered with conviction and its message enshrined virtue, piety, modesty and brotherhood of man. In fact it was the first truly universal charter of Human Rights long before the one written by the United Nations in 1940´s or the American President Lyndon Johnson in 1960.

As an article of faith, Muslims have to consume food that is Halaal. As per the latest research the total size of the global Halaal food market is worth about US$632 Billion per year. Through out the world people, including non-Muslims, are shifting to Halaal products due to health, purity and hygiene, ultimately making Halaal a lifestyle choice. SANHA’s mission accords with the providing of services to meet this need.

However, of late, non-Muslim producers who cater for the needs of the Muslim community have been targeted by religious extremists. Islam is a religion of moderation and we deplore and reject extremism from wherever it emanates, be it by Muslims or non-Muslims. Today, on the eve of the assembly of Hajj culminating with the Festival of Sacrifice, i.e. Eid ul Adha, more than ever, in a world awash with rivers of blind prejudices and uncalled for splits and rivalry, the Divine Message must serve as a purging torrent of spiritual enlightenment and unity.

In keeping with the spirit of the message, our prayers are for all our certified plants, member organisations, associates, well wishers, staff, families and friends, Muslim brothers and sisters and our critics, to have a peaceful and joyous Eid ul Adha.

The Story of our Beginning, the Present and the Future

Verulam Madressa Koovathe Islam

At the turn of the last century with the arrival of Muslims from the Indian subcontinent as labourers and merchants in the then British colony of South Africa, a need for Islamic education arose.

The Muslims of Verulam took up the challenge and formed the Verulam Young Muslim Society in 1917. One year later madrasah education was provided at a home. The Verulam Madressa Koovathe Islam organisation was formed and tasked with the responsibility of overseeing the educational needs.

The society with its dedicated officials pursued their task over the decades with vigour and adapted to the challenges faced by the community for secular education as well. Amongst the momentous decisions and achievements was the establishing of the school in 1955 and achieving a state-aided Indian school status in 1962. The Apartheid laws prevented the community from offering education to any other population group except Indians.

Today by the grace of Allah Almighty the school has its own premises with 23 classrooms, 2 specialized hifz classes and a multipurpose hall. It caters for 550 learners ranging from pre-school to matric with an emphasis on Islamic ethos.

The most striking feature of the school is that 65% of its learners are from the indigent population and their fees are fully subsidized by the society from their fund raising activities.

The latest project of the school is the replacement of the prefabricated preschool classroom with a new modern building.

The organization and its achievement is a fitting tribute to the founding members who in 1917 desired to provide sound education to their fellow human beings. May Allah Almighty be pleased with them.

HADITH

(Sayings and Traditions of the Prophet Muhammad peace be upon him)

Ummu Salamah radiyallahu anha narrates that Nabi sallallahu alayhi wa sallam said, "When you see the new moon of Zul Hijjah, and intend to slaughter, then refrain from (trimming) your hair and nails." [Muslim, Kitaabul Adaahi]

Commentary: Rasulullah Sallallahu Alayhi Wa Sallam has advised that those who will be slaughtering for Id al-Adha, should refrain from cutting their hair and nails from the sighting of the moon of Zul Hijjah until the slaughter. The benefit of this practise is that the rest of the Ummah experiences an aspect of the Ihraam state of the Hujjaj. Of course this is not compulsory as Ihraam is, nor is there a penalty upon those who would cut their hair and nails, as there would be for the Hujjaj.

The slaughter thus entails a financial sacrifice, an emotional sacrifice (especially in the past when even city-folk would rear the animal for several months and develop an emotional attachment to it) as well as a bodily sacrifice.

The narrator of this Hadith is our Mother, the honoured wife of Rasulullah sallallahu alayhi wa sallam, Hind bint Abi Umayyah, nicknamed Mother of Salamah. This is a reminder that our sisters too bear a responsibility in their own capacities to uplift and spread this Deen.

BRAAI MARINADE FOR STEAK AND CHOPS

Meat is the focal point of the Braai (BBQ) and as the host you are “steaking” your reputation on it. Choosing fine cuts of meats and using the proven marinade recipe of the Mothers Committee of the Reservoir Hills Madressa of Durban, will zoom you to the top of the pops with your guests.

Ingredients

2 kg meat
1 1/2 packet Knorr meat marinade
1 cup Knorr meat marinade sauce
1 1/2 tsp barbecue spice
1 1/2 tsp steak and chops spice
1 tsp mustard powder
1 tsp salt
3 tsp red chillie powder
1 tsp ginger garlic
3/4 cup white vinegar
1/2 cup lemon juice

Method

Mix above ingredients together
Marinate steak in marinade 1 hour before braaing
Chops can be marinated a few hours before braaing.

The Boy from Hamilton with apologies to our Kiwi friends.

On the first day of primary school the teacher asks everyone to count to 30. Some count as high as 10 or 15 others can’t get past 20, but Farouk counts up to 30 without making any mistakes. When he tells his Dad how well he did, his dad says, “that’s because you are from Hamilton, my son.”

The next day, the teacher asks everyone to recite the alphabet. Most can only make it halfway through without trouble, but Farouk rattles off the letters perfectly. When he brags to his dad about how he did, his Dad explains, “that’s because you are from Hamilton, son.”

The next day the teacher takes the kids out on the field for sports and activities. Whilst most of them are nervous and hesitant, Farouk excels. He runs faster, jumps higher, does the haka stronger and kicks the rugby ball further than the others. That night he boasts, “Dad, I am the strongest in my class. Is it because I am from Hamilton?
“No, son,” explains his dad. “it’s because you are 22”

Q. Could you please tell me if Steers 1000 Island Sauces are Halaal, as I have seen the E-number E270 as an ingredient. I have seen a list stating E270 contains pig fat. Please clarify?

A. Kindly note that the Steers range of sauces are certified Halaal by SANHA. E 270 (Lactic Acid) is a Halaal ingredient. It does not contain pig fat.

Q. Is bioplus and turbovite available in sachets at the pharmacies permissible to use?

Turmeric

A bright yellow spice and colourant that is the root of Curcuma Longa. Its active ingredient is curcumin and it has a distinctly earthy, slightly bitter, slightly hot peppery flavor and a mustardy smell. It has become the key ingredient for many Indian, Persian, Thai and Malay dishes. It is used in canned beverages and baked products, dairy products, ice cream, yogurt, yellow cakes, orange juice, biscuits, popcorn color, sweets, cake icings, cereals, sauces etc.

It is is also used in folk medicine, cosmetics and for ceremonial purposes in some cultures.

Oil strike - Dangerous chemical changes

Experts agree that it's generally safe to use high-quality, fresh oil when frying. Vegetable oils are reactive substances that can undergo dangerous chemical changes when overused. "When cooking oils and fats are used over and over in frying processes, they start to break down to eventually form unhealthy products," says Prof Lodewyk Kock of the University of the Free State, South Africa. In some instances, varnish-like compounds can be formed. Consumption of this has been linked to growth problems, diarrhoea, heart disease, liver damage, enlargement of the liver, spleen, adrenal glands and cancer.

A study by the University of Minnesota also shows that in vegetable-based cooking oils that are heated or reheated for hours at a time, there is a build-up of a toxin linked to heart disease and neurological disorders.

Certain oils seem to be more suitable for frying than others. Olive oil, for example, is fairly stable at high temperatures, thanks to its high mono-unsaturated fatty acid content. Canola oil is another good one.

Tips for safe oil use

A simple indicator that oil may have been abused is its colour. Fresh oil has a clear, light yellowish colour whilst old, used oil has a dark mustardy brownish colour. Overused oil, besides being discoloured, also has a rancid taste.

In order to safeguard yourself against abused oils, keep the following in mind:

• Buy the best quality oil you can afford and only buy from reputable suppliers;

• Use only stainless-steel frying vessels;

• Maintain a frying temperature of 180 degrees Celsius or below;

• Soak raw chips in water and then dry them before frying to remove excess moisture, thus delaying the oxidation of oil;

• Filter oil after use to remove small pieces of food;

• Store oil in a closed container in a cool, dry place;

• Throw away oil if it is dark brown, tastes or smells unpleasant, or is stringy.
