No. 72

In the Name of Allah, the Most Gracious, the Most Merciful

In a crucial time in the young democracy of our country, ugly scenes of service delivery protests have surfaced in some parts of our country. Local authorities including a Halaal certifier has had to endure these protests with marchers expressing frustration and anger on broken promises and lack of transparency.

In keeping with SANHA’s founding principles of transparency and accountability, SANHA officials literally stood tall and delivered their individual reports to the public at the Annual General Meeting (AGM) held recently.  Some 130 attendees at the Taronga Road Masjid Hall in Crawford, Cape Town witnessed the presentation of the reports and were given the opportunity to question the officials. They were also handed the detailed copies of the reports including audited financial statements. An abridged copy is available on our website.

Some interesting points of the report from the past year were: -

  • Total income received by SANHA in the last period – R 12.1 million
  • Total expenses incurred by SANHA in the said period – R 11.6 million
  • Total number of queries fielded by the Helpline during the period under review: 25 717
  • Total number of plants certified in the past year: 195
  • Total Number of certificates withdrawn/cancelled in the period: 84
  • Total number of Muslim employees under the direct and indirect employ of SANHA: 239
  • Total number of Chicken Abattoirs approved by SANHA - 34
  • Total number of Red Meat Abattoirs approved by SANHA - 24

Many attendees expressed the view that the other Halaal bodies ought to have been present to show solidarity with the Ummah especially since several instances of Haraam labelled as Halaal was exposed recently. The differences in standards also needed to be addressed with some bodies accepting machine slaughtered poultry from abroad which SANHA does not accept.

Unfortunately they were conspicuous by their absence, notwithstanding personal invitations sent to all certifiers.

We thank you for your support and the opportunity to serve the Ummah.

Standing tall so you don’t fall short.

The Story of our Beginning, the Present and the Future

Enabling Muslims to explore the world with peace of mind

By 2020 Muslims will spend an estimated USD 200 billion on business, leisure and healthcare travel.

Many service providers are keen to accommodate this segment but with no uniform standards buzzwords  such as  "Shariah compliant hotels", "Halaal travel", "Islamic travel ", "Halal hotels" etc have come into vogue with none of them being fully defined leading to confusion and even instance of exploitation.

The challenge to address this was taken through the launch of the world’s first dedicated travel portal, Crescentrating. This allows travel services and facilities to be evaluated and rated for choice by Halal-conscious travelers.

Their website is a specialized focus on listing of travel services that are rated by Crescentrating to destination guides, airport guides, etc. which help Muslim travelers make Halal friendly choices when planning their trips.

The areas considered in the Crescentrating includes the level of Halal food services offered, Salaah information/facilities,  ease of use of water in the washrooms, ability to cater to the specific needs during Ramadan, the level of non-Halal activities in the hotel, and availability of recreational facilities with privacy for males and females.

Hotels that wish get a Crescentrating and be listed on their website have to agree to allow for onsite audits.

Future plans include rating services for theme parks, hospitals, airlines, etc. as well and eventually cover all services and facilities related to travel and hospitality.

Crescentrating is a Singapore – based organisation that supports SANHA’s mission of the consumption of Halaal.

See I didn’t know that column for “The world’s first Air Travel Prayer Time Calculator”.

(Sayings and Traditions of the Prophet Muhammad (peace be upon him))

Hadith: Shaddaad bin Aws radiyallahu anhu narrates that Rasulullah sallallahu alayhi wa sallam said:

Verily Allah has decreed kindness in all matters. So when you kill, do it a good way, when you slaughter, slaughter in a good way. Sharpen your knife and put the slaughter beast at ease. [Muslim]

Comment: Udhiyyah (Qurbaani) is a great act of worship. Acquire the fullest reward by observing the Sunnah. Let us not be deprived by being cruel to Allah’s creation.  Let us use this occasion to demonstrate to the world that Muhammad sallallahu alayhi wa sallam was indeed sent as a mercy unto all creation. A proactive educative stance is the best way to defend his honour.

Creamy Jalapeno Chicken

Recipe supplied by Supreme Foods

Here is a home grown recipe that uses the sauce shown in our “Photo Gallery” and “Tell us And We’ll Tell the World” column. It’s easy, it’s different and it’s worth trying.

  • 1 Tablespoon olive oil
  • 2 tsp lemon juice
  • 1 tsp Jalapeno Peri Peri sauce
  • 1 tsp ground cumin
  • 2 tsp crushed garlic
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon salt
  • 500g  boneless skinless chicken breast
  • 300ml cream
  • 60 g sliced mushrooms
  • 1 Tablespoon sliced jalapeno peppers
  • 1 or 2 Tablespoons Fried onion
  • Sprinkling of parmesan chees

  • Pound the chicken breasts with a mallet to create very thin fillets or cover with plastic and roll with a rolling pin..
  • Combine first seven ingredients and place in a resealable plastic bag.
  • Place chicken fillets and turn over several times to coat.
  • Refrigerate overnight. If needed immediately a minimum of 30 minutes will do.
  • Pan fry in shallow oil on medium high. Approximately 3 minutes per side.
  • Place sliced mushrooms in the same pan and stir fry for a few minutes.
  • Turn heat down to medium low and deglaze by putting in the cream and allow to reduce.
  • Add 1 to 2 teaspoons of Jalapeno sauce depending on your degree hotness required.
  • Stir in Jalapenos and fried onions.
  • Return chicken breast to the pan and allow it to coat and warm.
  • Sprinkle parmesan cheese, give a grind of pepper and place pan under oven grill for 30 to 45 seconds.
  • Garnish with a little jalapeno and fried onions and serve immediately

Lingering longer or on the move, he stops here, there and everywhere to share what’s on his plate and his mind. He may be in your place soon but you will never know he is there.

My enthusiasm waned considerably when I learnt that our lunchtime meeting included something Portuguese.  I have nothing against Portuguese cuisine.  On the contrary, prepared in the traditional way with freshest ingredients, it can be spectacularly delicious.  Unfortunately imitators and innovators with their various twists have created flavour notes from the sublime to the ridiculous.

According to the older generation, the best and only benchmark on poultry should be the LM Peri Peri chicken. Portuguese colonisers of Mozambique fused European ingredients such as paprika, garlic, lemon juice, and/or vinegar and in some cases even whisky / wine with the African birds eye chilli for that great tasting flavour. LM being the acronym for Lorenzo Marques, the then capital of Mozambique, renamed Maputo after its liberation.

My host stopped at Calistos in Central Road, in an area where there is no shortage of competition in terms of similar places to eat. The restaurant has over sixty items on the menu ranging from superb seafood, incomparable prawns and full flavoured Portuguese steaks. Anticipating a time problem due to another commitment, one of the hosts suggested that we order a combination platter. No sooner this was done then as if by magic a smartly dressed waiter brought us some freshly baked Portuguese rolls, butter and condiments. We went along with the magic and the rolls disappeared.

Then came the main attraction which even had a group of diners at the next table stealing admiring glances. A keep-warm bain marie of char-grilled succulent, tongue-tingling chicken cut into eight pieces and a kilogram of prawns with French fries and savoury rice was set on our table (see picture). After the first few bites we became convinced that this is what LM cuisine must have been about.  In fact one of the diners was moved to say that some of the more established operators ought to take lessons from Calistos. Even our traditional passion fruit and lemonade drinks too were given the Calisto twist by the addition of orange juice pulp and cream soda which created a lava like colour and effect, not to mention the great taste.

The atmosphere at Calistos is colourful and vibey. It seats just on 200 people and has already been used for private functions. An alfresco dining area also fronts onto the street for those that wish to dine and watch the world go by. The owners have also catered for Salaah and Hijaab facilities and are open till 10 PM. It’s Muslim owned and certified Halaal by SANHA.

According to my host the bill came to under R450. This in anybody’s language, in this day and age is incredible value for four people. This reviewer will be heading back again and again.....the taste lingers.

One out of every five persons on this planet is a Muslim. He is your neighbour, customer, supplier, employee, boss or friend.

Neighbour’s Rights

As taught by the Prophet Muhammad (peace be upon him)

“Help him if he asks your help;

Give him relief, if he seeks your relief;

Lend him, if he needs a loan;

Show him concern if he is distressed;

Nurse him when he is ill;

Attend his funeral when he dies;

Congratulate him if he meets any good;

Sympathise with him if any calamity befalls him;

Do not block his air by raising your building high without his permission;

Harass him not;

Give him a share when you buy fruits,

and if you cannot give him, then bring what you purchase quietly and let not

your children take them out to excite the jealousy of his children.”

Colleagues at work or on a journey are all regarded as neighbours. Muslims are required to have goodwill for one's neighbours and colleagues and offer practical care and help.

Q: I notice that Rascals is back on the market. Is it Halaal?

A: Rascals is NOT approved by SANHA as it contains bovine gelatine derived from non-Halaal slaughtered animals.

Regarding Bovine gelatine, some Ulama contend that a drastic metamorphic change occurs in the non-Halaal animal material used in gelatine manufacture thereby rendering the impure collagenous protein into Halaal gelatine.

Majority of the Ulama and International Halaal certification bodies are of the view that such metamorphic change does NOT occur and therefore they do not accept this view and have adopted a very holistic position on gelatine and other such ingredients of non-Halaal animal origin used in food production.

SANHA's Theological Committee holds the latter view and we reiterate that it is not acceptable to use non-Halaal raw material in the manufacture of food products due to the fact that abundance of Halaal raw material is available. Muslims should not look for technical loopholes (metamorphosis etc.) to legitimise the use of raw materials sourced from Haraam animals in food production.

SANHA therefore recommends that all products containing non-Halaal gelatine be avoided.

This is just a short note confirming my privilege in attending the SANHA AGM this past weekend. As a community activist, I regularly attend various AGM's annually. Please allow me to record a vote of confidence in the slick way the protocol order flowed. You had a great visionary as the keynote. I was truly amazed by the continuity and more so the transparency. In my view, SANHA has bench marked governance at a very high level. A special thank you to all those who prepared all the lunch and of course, what would a CT occasion on a Sunday be without the koeksisters. Keep up the good work and our prayers as members of the Ummah continue.

A member of the capsicum family, jalapeño chillies range from moderately to very hot. Originating from South America, they are about 4cm long, dark green when young and scarlet when ripe, and are sold both fresh and tinned. Dried and smoked, they are known as chipotle, and take on a deep, sweet flavour that some say has a slight chocolate note. Chipotles are also available pickled.

They are popular as snacks in North American cuisine. Some methods of serving this are:

  • Stuffed with cheese, usually cheddar or cream cheese, breaded and deep fried.
  • Hollowed out, cooked or raw and stuffed, often with a mix containing seafood, meat, poultry and/or cheese.
  • As a jelly.

Sports Drink

Why be bored with the same old sports drink day after day. Make your own variations, save money and be healthy and wise.

Here are 3 options designed by dietician Naomi Dsouza for Femina India that restores electrolytes and carbohydrates to your body.

Option 1
Take half cup of orange juice (approx 100ml) and add 900 ml water to it. Add 5 tablespoons of sugar and 1 tsp of salt. Diluting the orange juice reduces the calorie count so that the calories are largely supplied only by sugar.

Option 2
Take 2 caffeine free (green) tea bags and dip them in 450ml of boiling water. Stir in 2 table spoons of sugar and ½ teaspoon of salt with 2 tablespoons of lemon juice. Chill this mix. The antioxidants present in this concoction stimulate the flushing of toxins in the body.

Option 3
Fuse 3 tablespoons of corn syrup in 750ml water to rehydrate your body. This works wonderfully well on a mild exercise day.

Enjoy your workout – enjoy your day
